The Yummiest Summer Salad

This past weekend I cooked a dinner that Ian described in all seriousness as the best meal he's ever had. Possibly the greatest compliment he could have ever given me. I cooked ribs, tomato pie, and Designer Bags and Dirty Diapers' peach and crispy pancetta salad. Everything, everything was awesome, but this salad was a stand-out winner.

I served it at room temperature per Natalie's recommendation.

This was truly a stellar recipe! Sweet, tangy, so much flavor.

I purchased the pancetta from Trader Joe's in a little package and they have the best price I've found on it.
