Not too long ago, I purchased a sizeable bag of plums, and then I found myself feeling a bit "over it" with the plums. I'm more of a sliced fruit person, I think? Regardless, I certainly didn't want them to go to waste.
We had a cookout to attend this past weekend with friends, so I did a twist on one of my most favorite dessert recipes, Fresh Apple Cake (original post here), and subbed the sliced apples for plums.
It was really, really tasty. Which is great, because nobody wants to bring a dud to a cookout. :)
I started off by spraying a little Pam in an 8x8 glass dish and then added the sliced plums.
You'll need a full stick of melted butter for this one ... it's not low-cal, but no really good desserts are.
Top the plums with dry yellow cake mix -- I don't even use an entire box. I use more than half of it, but you could use as much as you'd like.
Drizzle the melted butter over the top, and bake at 350 for about 35-40 minutes or desired doneness.
The result is a really buttery cake filled with fruit and a crunchy top.
This dessert is embarrassingly easy, and you could sub in lots of different fruits -- peaches, mixed berries, strawberries, nectarines. The next time I make it, I'd like to try mixing a few fruits, like apples and blueberries or peaches and raspberries!
